It can be tough to stay on track while enjoying and celebrating the holidays (especially one as fun as St. Patrick’s Day)…but this super food salad is an easy and refreshing go to instead of the usual corned beef, cabbage and mashed potatoes. Add sprouts and edamame and/or top with a lean fish or meat to make sure you get an extra serving of protein.

Ingredients

Vegetarian, Gluten free

Produce

  • 1 Alfalfa sprouts
  • 1 Avocado
  • 1 Broccoli or broccolini
  • 1 Celery
  • 1 Cucumber
  • 1 Edamame
  • 1 Grapes, Green
  • 1 Green onion/chives
  • 1 Greens
  • 1 Snap peas

Condiments

  • 1 Goddess dressing, Green

Nuts & Seeds

  • 1 Pistachios

Directions

  • Having friends over? Try setting this up as a salad bar so each guest can customize their salad with the toppings of their choice. Start with your salad greens base, add your toppings (and cooked lean fish or meat, if you’d like), top off with Green Goddess dressing and enjoy! Happy St. Patrick’s Day!
